It's like a hug in a bowl



Soup is one of my very favorite things to make in the winter, because it’s warm and filling, and it’s just what I want when I’m walking in from the frozen tundra. (aka Wisconsin)


Plus, there’s like a million ways to make soup suuuuuuper healthy. (see what I did there?)


Soup is basically a blank canvas. You have a base… AND THEN YOU JUST ADD STUFF. Besides a salad — soup might be the next best vehicle to get a ton of your veggies in.


Soup is basically just:

BASE (broth, stock, or pre-made soup mix)

VEGGIES (squash, kale, onion, tomatoes, corn, etc.)

PROTEIN (beans, chicken, sausage, beef, etc.)

HERBS & SPICES (bay leaf, basil, garlic, etc.)


Soup is a decent amount of volume, and especially when you’re chocking it full of ingredients like protein and lots of veggies (hello fiber)… it’s going to be a really filling, satisfying meal. It also stores really well, so you can make a big batch on Sunday and take it for work lunches all week. (Hello convenience).


PLUS— (omg I can’t believe I haven’t mentioned this yet)… soup is a perfect pair with my other favorite food………….. BREAD. A big piece of crusty sourdough? Or, omg, POPOVERS?! Gimme a break. Soup and bread go together like peas and carrots. Or, you know… soup and bread. Whatever.


So here’s the deal: I rarely make soup from a recipe. So if you ask me for one… I probably won’t have a good answer for you. When it comes to soup (like so many things I make)… I honestly just keep throwing stuff in, and keep tasting it until it’s awesome.


90% of the time it turns out great! Every once in awhile it blows, but hey — that’s cooking for ya. And I’m only human, yo.


The bowl you see here is basically whatever I had left in my fridge, and some stuff that was lingering in my freezer. (My fridge is officially empty now…. and I need to go to Costco).


Here’s what I THINK made it in the pot:

1 box of chicken bone broth

1 box of TJ’s tomato and roasted red pepper soup

couple bay leaves

sweet potatoes

italian sausage

red onion

cauliflower rice

corn

carrots

edamame

kale

peas

some spices (don’t remember which…)


This soup is delicious. I feel full, and warm, and like I’m gonna have a six-pack any day now. Plus, I have an awesome ready-to-go meal on hand at the snap of a finger, equipping me for a busy week of work.


FILLING + HEALTHY + CONVENIENT = count me friggen IN
